Spiced Fried Eggplants
Spiced Fried Eggplants which is very tasty can be easily prepared too. It can go along with any other dishes such as Watercress and Baby Potatoes Stir Fry and can be accompanied whether with rice, farata, naan or bread.
In fact, I have used my own home-made curry powder in it. You can include this dish in the festive seasons too because at least one vegetable dish is a must.

Eggplant Recipes
Eggplant is a very common vegetable in my kitchen and I prepare it in different ways such as curry, fried, pickle, chutney, stir-fry and the best of all that I like is Fried Eggplant in Spices. In fact, I have tried making new recipes on my own and I am going to share one of them here.
Spiced Fried Eggplants Recipe
- 500 gms Eggplants
- 11/2 tbs of Curry Powder
- 1 big sliced Onion
- 6 dried Fenugreek Seeds
- 2 green Chillies (cut lengthwise)
- 1 tsp of Vinegar or Tamarind Pulp
- 1 tbs of Garlic and Ginger paste
- 1 tomato cut into cubes
- 1 bunch of Spring Onions
- Curry Leaves
- Thyme
- Coriander Leaves
- 2 tbs of Oil
- Salt to taste
- 1/4 cup of water
- Cut the eggplants in bigger cubes.
- Wash well.
- Add salt and vinegar/tamarind pulp.
- Mix well.
- Put oil in a non-stick pan and fry the eggplants till they become a bit golden.
- Take them out and place them in a plate.
- Now, add the dried fenugreek seeds in the oil followed by the onion, tomato, curry leaves and thyme.
- Stir continuously till the tomato is cooked.
- Add the eggplants, green chillies and then the curry powder.
- Add salt for the curry powder.
- Then pour water and let it cook for 5 minutes stirring continuously till the water is dried up.
- Switch off the oven.
- Garnish with cut spring onions and coriander leaves.
You will definitely like this spiced fried eggplants. Serve it hot preferably.
