Homemade Rougaille Recipe

Have you ever eaten 'Rougaille'?

'Rougaille' is a popular Mauritian dish which can be served along with any other dishes. You can eat it with bread, rice, pharata or even noodles. It is a delicious dish and very easy to prepare too.

What is so great with it is that you can add either one of these such as Mauritian 'gateau piment', soya chunks, fresh peas, meat, shrimps, fried or boiled eggs and fish at the end when the 'Rougaille' is cooked. You just have to add a small amount of water to it and let it simmer for 5 mins.










Homemade Rougaille Recipe


Ingredients

1 medium onion sliced
8-10 tomatoes finely chopped
2 green chilies sliced
1/2 bunch of coriander chopped
1/2 bunch of parsley chopped
Thyme
5 Curry Leaves
1 tsp crushed ginger
1 tsp crushed garlic
Salt to taste
1 tablespoon of oil

Method

~ In a pan, heat oil and fry garlic, ginger, and onion on low heat. Cook until the onions turns lightly golden brown.

~ Add tomatoes, chillies, salt, thyme and curry leaves and stir well.

~ Add two tablespoon of water and leave to cook till the tomatoes are done.

~ When it is already cooked then add in coriander and parsley.

~ Transfer the Rougaille in a serving bowl and serve hot.
