Mixed Vegetables Pickle is very delicious and is appreciated by all here in Mauritius. It is mostly eaten along with 'pharata', 'dhol puri' , naan or bread and also with rice.
You can make vegetables pickle by choosing your own favourite vegetables along with ready made pickle spices which are available everywhere if you do not know how to prepare the spices.
Mixed Vegetables Pickle
For best result, I normally use fresh vegetables instead of frozen ones. This pickle can be stored in the fridge for a week and can be served with any dish you wish too.
Today, I am going to share my recipe with you and I am sure you will like it too.
Mixed Vegetables Pickle Recipe
Ingredients
200 g finely sliced Cabbage
200 g Carrots cut into matchsticks
200 g French Beans finely sliced lengthwise
3 tbs of Black Mustard Seeds
2 tbs of crushed Garlic
1 tbs of Turmeric Powder
3 sliced green Chillies
2 tbs of mustard oil or vegetable oil
1 large Onion finely chopped
1 tbs of White Vinegar,
Salt to taste
Instructions
- Dip all the vegetables in hot boiling water and leave for a few minutes until slightly cooked but still crisp.
- Remove from water, drain and allow to dry out.
- Grind the mustard seeds along with garlic and add turmeric powder and a little water to make a paste.
- Heat some oil in a wok and fry the onion.
- Then, add the mustard paste and mix well.
- Immediately after that, add the vegetables, green chillies, salt and stir fry for 2 minutes.
- Remove from heat and allow to cool.
- Add vinegar and mix well.
- Put the pickle in a glass jar and store in the refrigerator.
Please note that you must not fry the mustard paste too much otherwise it will have a bitter taste. You can also use a Vegetable Grater which slices your vegetables in the same shape and size.
