Mauritian Aubergine Chutney Recipe
Ingredients
1 large Aubergine (Eggplant)
3 to 4 tbs of Vegetable Oil
5 Garlic Cloves, crushed
1 Onion, finely sliced
2 dried Chillies, chopped
1 tsp of Vinegar
1 tbs of freshly chopped Coriander Leaves
Salt to taste

1 large Aubergine (Eggplant)

5 Garlic Cloves, crushed
1 Onion, finely sliced
2 dried Chillies, chopped
1 tsp of Vinegar
1 tbs of freshly chopped Coriander Leaves
Salt to taste
Cooking Instructions
- Rub the aubergine with a little bit of oil and put it on a preheated grill.
- Grill it until it becomes soft and brown and that also on all sides.
- Then, peel off the skin from the aubergine.
- Place the flesh of the aubergine in a bowl and mash it either with a fork or a vegetable masher.
- Add the sliced onion, garlic, salt, chillies and vinegar and mix well.
- Finally, sprinkle the chopped Coriander leaves on the top.
