How To Make Coconut Barfi

Coconut Barfi


Coconut Barfi is sweet in taste and it is a combination of fresh grated coconut and milk. This reminds me of my mother who used to prepare it whenever there was a celebration or when guests would be coming at home. 

It is especially cooked on the Diwali Festival which is the Light Festival in other words. When I was a teenager, I was eager to learn cooking. My interest at that time was mainly for cakes and desserts. My mother used to cook it with cow's milk as at that time we used to get it in great abundance but nowadays it is very rare.







Coconut Barfi Recipe


  • Serves: 25 pieces
  • Total Time: 30 minutes

Ingredients
  •  2 cups of finely grated Fresh Coconut
  •  1 cup of Milk
  •  1 cup of Light Cream
  •  3/4 cup of Caster Sugar
  •  3 drops of Vanilla Essence
  •  1 teaspoon of Cardamom Powder

Instructions
  1. Combine the grated coconut, milk, cream and sugar in a saucepan.
  2. Boil the mixture over high heat.
  3. Stir it continuously until it is reduced to about one-half volume.
  4. Lower the heat to moderate.
  5. Let the mixture reduce while constantly stirring it until it forms a firm mass that pulls away from the sides of the saucepan.
  6. Add the Vanilla Essence and cardamom powder.
  7. Pour the coconut burfi onto a slightly buttered tray.
  8. Press the mixture with the help of a spatula.
  9. When it is cool, cut into 25 squares.
  10. You can store them in an airtight container and may be refrigerated for up to two weeks.
